chicken taco soup and favorite guac

I've been loving my slow cooker lately!  I made some Slow Cooker Chicken Taco Soup the other night and it was super yummy!!  It was also great as leftovers.  I put some in a warmed tortilla to make a burrito and it was yum-o!  Our favorite side to accompany any Mexican meal is our favorite guacamole!  Our neighbor Travis shared his recipe and we just love it!  Enjoy!

Slow Cooker Chicken Taco Soup

Ingredients:
1 onion, chopped
1 can black beans
1 can whole kernel corn
1 (8 oz.) can tomato sauce
1 (12 oz.) beer
1 can Rotel tomatoes
1 pkg. taco seasoning
3 chicken breasts

Directions:
In slow cooker, combine onions, black beans, corn, tomato sauce, beer and Rotel.  Add taco seasoning and stir to blend.  Lay chicken breasts on top, pressing down into liquid.  Set slow cooker on low, cover and cook for 5-7 hours.  Remove chicken breasts, shread and return to slow cooker.  Continue cooking for a few more hours.  Serve topped with shredded cheddar cheese, a dallop of sour cream and crushed tortilla chips.



Travis's Guacamole

Ingredients:
3 ripe avacados
6-7 drops of lemon juice
Salt to taste
Garlic powder to taste
3-5 T. salsa
4-5 slices of jalapenos, chopped

Directions:
Mix and enjoy!

Guacamole is the one thing I can make without my recipe book! ha! I will have to send you my version as well. I love it!!
I have never added Salsa to mine so I will have to try this.

Oh, and just so you know... no one in NYC knows Ro*Tel! Makes me crazy!!
