special apple pie

Saturday night, I made a Special Apple Pie for my special sweetie!  The recipe is from my college roommate (Maegan's) mom, Susan Miller.  It was my first time to make it and it turned out super yummy!!


Susan Miller's Special Apple Pie

Crust:
1 3/4 c. flour
1/2 c. sugar
1 t. cinnamon
1/2 t. salt
1/2 c. plus 2 T. butter
1/4 c. water

Combine flour, sugar, cinnamon and salt.  Cut in butter.  Add water and toss with a fork until evenly moistened.  Roll out on a lightly floured board and put in a 10" pie plate.  Set aside.

Filling:
8 Macintosh apples, peeled, cored and sliced
1/2 c. flour
1 c. sugar
1/2 t. salt
1 2/3 c. sour cream
2 t. vanilla
1 egg

Preheat oven to 450 degrees.  Combine all ingredients and spoon into piecrust.  Bake 10 minutes.  Reduce oven to 350 degrees and continue to bake for 40 minutes or until filling is goldent and slightly puffed.


Topping:
1 c. chopped walnuts or pecans
1/3 c. sugar
1 T. cinnamon
Pinch of salt
1/2 c. flour
1/3 c. brown sugar
1/2 c. butter, softened

Combine nuts, flour, sugars, cinnamon and salt in a bowl.  Mix very well.  Blend in butter until mixture crumbles.  Spoon topping over pie and bake for 15 minutes at 350 degrees. 
 

I would highly recommend making it sometime soon for your sweetie!

Looks fabulous, I'll have to bookmark that recipe. There's a pie kitchen here in Louisville that serves homemade apple pie with a layer of caramel icing on top - and yes, it is as sinful as it sounds!

Mrs. Miller was one of my favorite Chi O advisors in college! I'll have to try her recipe (sans nuts for me too Liz!).
