I made chili for the first time this fall tonight and it hit the spot! I started it this morning before I left for work and when I got home all I had to do was add the seasoning and it was ready! This is a really easy and yummy chili recipe and since it uses V-8, I consider it to be semi-healthy! Hope your family likes it as much as ours does! Enjoy...
Chili
Ingredients (Double batch):
4 lbs. ground beef
1 large can V-8 juice (regular or spicy...sometimes I use both)
2 cans Rotel tomatoes
2 cans pinto beans
2 envelops William’s Chili Seasonings (or 1 envelope if it says 4 pounds of meat)

2 lbs. ground beef
3/4 large can V-8 juice (regular or spicy...sometimes I use both)
1 can Rotel tomatoes
1 can pinto beans
1 envelop William’s Chili Seasoning

Ingredients (Double batch):
4 lbs. ground beef
1 large can V-8 juice (regular or spicy...sometimes I use both)
2 cans Rotel tomatoes
2 cans pinto beans
2 envelops William’s Chili Seasonings (or 1 envelope if it says 4 pounds of meat)
Ingredients (Single batch):
2 lbs. ground beef
3/4 large can V-8 juice (regular or spicy...sometimes I use both)

Directions:
Brown meat and drain. I usually do this the night before and refrigerate over night. In a crockpot, combine meat, V-8 juice, Rotel and beans. Do not add seasoning yet. Cover and simmer on low 6 to 8 hours, stirring occasionally. The hour before serving, add chili seasoning and simmer uncovered until it reaches desired thickness. (Double batch does not need to boil as long as single batch.)
Garnish with sour cream and cheese. Serve with saltine crackers, Fritos or cornbread.
