These are the muffins that I made for Addi's class to celebrate her birthday. This recipe is easy and makes a ton! They are always a crowd pleaser and just taste so yummy in the fall!
Chocolate Chip Pumpkin Muffins
Ingredients:
3⅓ c. flour
3 c. sugar
2 t. baking soda
2 t. cinnamon
1 t. nutmeg
¼ t. cloves
4 eggs, beaten
1 can pumpkin
⅔ c. milk
1 c. cooking oil
1 t. salt
1 c. mini chocolate chips
Directions:
Preheat oven to 350°F. Stir together flour, sugar, baking soda, spices and salt. In separate bowl combine eggs, pumpkin, milk, chips and oil. Add liquid mixture to dry ingredients, stir until combined. For regular size muffins, pour into lined tins and bake 20 to 25 minutes. For mini-muffins, pour into lined tins and bake for 10 to 15 minutes. For loaves, pour into 2-9x5-inch greased loaf pans and bake for 55 to 65 minutes.
