muffin tin munchies

Addi has just become such a picky eater lately and it is so incredibly frustrating! (I know my mother is just loving this!) In an effort to be creative with her meals, I started googling ideas and combing through blogs. I came across this idea and thought it was just genius! All of those goodies look much more appetizing than in that cute heart mold. I just happened to have that already, but now I'm on the hunt for some good bargains! Let me know if you find anything cute out there!!

Addi still didn't eat everything on her tray, but she had a great time rearranging her food.

(Cheerios, Chex, Craisins, apples, cheddar cheese, peas & carrots, blueberries, peas & carrots, ham, ham cheddar cheese and blueberries)

I also made Addi some apple sauce and she really loved it.  Enjoy!

Chunky Apple Sauce

Ingredients:

2 c. apples, cored, peeled and cubed

1/2 c. sugar

1/2 t. cinnamon

1/4 c. water

Directions:

Mix ingredients together in a microwave safe bowl.  Add water, stirring gently. Cover and microwave for 7 minutes, stirring every 1 to 2 minutes.

super bowl {sunday} funday

Last night, we went and watched the Super Bowl with several of our friends.  Of course, MO was there and she and Addi were in heaven!  We were at the country club and had the entire dining room for just our party.  Those two girls ran around that room until they just couldn't take one more step!  Addi would run after MO and then they would turn around and MO would chase Addi.  I have never heard those two girls giggle like they did.  It was so much fun watching them play...Super Bowl?  What Super Bowl?  Commercials?  I didn't see any of that!  I just saw these two sweeties having a ball!!!  And that, my friends, is what Super Bowl Funday is all about!

"Hey MO, my mom has her camera out again!  You know the drill...just look at her and maybe she'll leave us alone once she had a good picture.  Just play along!"

"Cheese!  Now will you leave us alone mom?"

"Hey MO, let's see if we can climb up here!  That would be fun!"

"Addi that doesn't look like a good idea.  I don't think we should!"

"Yeah I guess you're right MO.  We could practice jumping off this ledge instead!  How about that?"

"I don't know about that either.  Hey look up there!  I see an Elf!" (We found where they store their Christmas decorations by accident!)

"Okay, well let's just crawl on here and see who falls off first...it won't be me!"

"Addi, you just never learn!  Your mom is still watching us crazy girl!  Wait until she goes back to talk to my mommy!" 

Sweet MO has so many tricks to teach Addi!  I have no doubt she will be teaching her things from now on!

 My favorite picture of the night.  They were just hanging out, chatting it up in their own little make-believe language that only they can understand!  They were just so cute!

tickle, tickle!

I just couldn't resist these darling little gladiators for Addi this spring.  They came from Target!  Addi refused letting me try them on her in the beginning...I think the straps were confusing to her.  Once I finally got them on her feet, she would not let me take them off!  She would run a few steps and then stop, bend down and "tickle, tickle".  It's going to be a long spring and summer if she's constantly tickling her toes.  Let's just hope she does't try to tickle other people's toes non-stop!

chicken taco soup and favorite guac

I've been loving my slow cooker lately!  I made some Slow Cooker Chicken Taco Soup the other night and it was super yummy!!  It was also great as leftovers.  I put some in a warmed tortilla to make a burrito and it was yum-o!  Our favorite side to accompany any Mexican meal is our favorite guacamole!  Our neighbor Travis shared his recipe and we just love it!  Enjoy!

Slow Cooker Chicken Taco Soup

Ingredients:
1 onion, chopped
1 can black beans
1 can whole kernel corn
1 (8 oz.) can tomato sauce
1 (12 oz.) beer
1 can Rotel tomatoes
1 pkg. taco seasoning
3 chicken breasts

Directions:
In slow cooker, combine onions, black beans, corn, tomato sauce, beer and Rotel.  Add taco seasoning and stir to blend.  Lay chicken breasts on top, pressing down into liquid.  Set slow cooker on low, cover and cook for 5-7 hours.  Remove chicken breasts, shread and return to slow cooker.  Continue cooking for a few more hours.  Serve topped with shredded cheddar cheese, a dallop of sour cream and crushed tortilla chips.

Travis's Guacamole

Ingredients:
3 ripe avacados
6-7 drops of lemon juice
Salt to taste
Garlic powder to taste
3-5 T. salsa
4-5 slices of jalapenos, chopped

Directions:
Mix and enjoy!

saturday of firsts

Addi had four firsts today: 1st OU/Texas game, 1st OU basketball game, 1st Toby Keith concert and 1st haircut!

We had tickets to the OU/Texas basketball game this afternoon.  Addi did a GREAT job!  When we arrived, Addi was very overwhelmed.  There were people everywhere and it was very loud.  As you can tell from the pictures, she was a little uneasy. Once we found our way to the seats, she was more comfortable and ended up sitting on my lap like a perfect angel...she even clapped for the Sooners!  She also really loved her ice cream treat!  At least she didn't sleep though this first like she did her first OU football game last fall!

Hi mom!

I didn't take any pictures at halftime, but it was so wonderful!  The halftime was in honor of the late Wayman Tisdale and Toby Keith performed his song "Cryin' For Me".  It was a very meaningful tribute!

Since Addi had ravioli for dinner tonight, it was bath night!  When I got her out of the bath, I decided to just bite the bullet and give her a little trim!  She's been working on a mullet (business in the front and party in the back!) for some time now, and I haven't had a chance to get her an appointment at Lollie's.  Scott held her while I just trimmed up a few of the longer hairs in the back.

It was kind of a spur of the moment event, so I don't have a before picture from today to show you, but here is one from a few weeks ago:

 

And here is the "after" from today.  She has a little wave in it so dried it still looks a tiny bit uneven, but wet, it is perfectly straight!  Please keep in mind that I have NEVER cut hair before tonight!  I was more nervous about cutting her neck than messing up her do.  I still need to make her an appointment to get a trim to even things up, but for now, this will work. 

We had a big day today and are looking forward to resting tomorrow before our big Super Bowl Party!!
